Halloween Pumpkin Doughnuts

Ingredients

250 g pumpkin, pureed

2 eggs

1 teaspoon Vanilla essence

2 tablespoon Butter, melted

300 g Plain Flour (2 cups)

2 teaspoon baking powder

pinch of salt

90 g Natvia (½ cup)

60 g Butter, melted (¼ cup)

50 g Natvia (¼ cup)

85 g dark chocolate chips (½ cup)

Method

  1. Grease a donut mould tray and set aside.
  2. Whisk together the pumpkin puree, eggs, vanilla, milk and stir to combine. Add the melted butter and stir until smooth. Sift in the flour, baking powder and salt. Add the Natvia. Whisk until smooth.
  3. Fill each doughnut cup until almost full. Bake for about 10 minutes until doughnuts spring back when touched. Allow to cool before removing from pan. Use a knife or spatula to loosen the donuts.
  4. Melt the chocolate and butter, Dunk doughnuts in the chocolate. And sprinkle with orange and green sprinkles.
