BLUEBERRY COCONUT OAT COOKIES

These delicious Blueberry Coconut Oat Cookies are the perfect afternoon snack, not only does it taste amazing it has no added sugars! This simple and easy recipe is perfect to make with the family!

Serves: 9-12

Prep: 15 minutes

Cook/Chill: 10-12 minutes bake

Ingredients

100g oats

50g desiccated coconut

2 scoops vegan vanilla protein powder

70g Natvia sweetener

1 teaspoon baking powder

2 tablespoons coconut oil

4 tablespoons almond butter

2 tablespoons oat milk

1 teaspoon vanilla extract

50g frozen blueberries

Method

  1. Mix together the oats, coconut, protein, sweetener and baking powder in a bowl.
  2. Melt the oil and almond butter then pour into the bowl along with the milk and vanilla, and mix to form a dough.
  3. Divide into 9-12 balls then place on a baking tray lined with greaseproof paper. Place a few blueberries on top and press down gently on each.
  4. Bake at 180C for 10-12 minutes until golden. Leave to cool completely and firm up - then enjoy!
