BAKED COOKIE DOUGH BROWNIE

Ingredients

Ingredients:
  • 75g rolled oats
  • 2 tablespoons cacao or cocoa powder
  • 40g Natvia natural sweetener
  • 3 tablespoons unsweetened apple sauce
  • 2 tablespoons flaxseeds
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • 150ml almond milk
  • 1 teaspoon vanilla extract
  For the cookie dough balls -
  • 50g rolled oats
  • 30g Natvia natural sweetener
  • 2 tablespoons cacao nibs
  • 2 tablespoons peanut butter
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons almond milk
  • ½ teaspoon vanilla extract

Method

  1. First make the cookie dough balls: Mix together the oats, Natvia and cacao nibs in a bowl. Melt the peanut butter, almond milk and vanilla then pour into dry ingredients and combine. Divide into small balls (about 8-10) and chill in the fridge for at least 30 minutes to firm up
  2. Preheat the oven to 170 degrees C.
  3. For the brownie simply place all of the ingredients into a food processor or powerful blender and whizz up until quite thick and smooth. Spoon into a greased skillet pan and spread out to cover. Arrange the cookie dough balls on top and press in.
  4. Bake for 20 minutes until firmed up and golden, then enjoy warm with a spoonful of Nuttvia - yum!
